Bone-in Pork Loin Roast

Pork Loin Roast

  • Bone-in, pork loin roast
  • Olive oil
  • Any pork dry rub
  • Apples and/or sweet potatoes
  • Oregano (fresh chopped)
  • Prep Time: 10 minutes
  • Cook Time: 3 hours
  • Meat Internal Temp: 165°F
  • Skill Level: Easy


Preparing the Pork Loin Roast

  1. Trim excess fat from the pork loin, leaving some fat.
  2. Lightly coat with olive oil.
  3. Generously coat with a dry rub.
  4. Link two hooks into the meat on the bone side.
  5. Hang in the cooker for 2 hours.
  6. Remove when the internal meat temperature is 165.
  7. Let sit for 10 minutes.
  8. Cut and serve.

Prepping Sweet Potatoes

  1. Puncture sweet potatoes with a sharp knife so they don’t burst when cooking.
  2. Coat in olive oil.
  3. Add salt and pepper if desired.
  4. Set on grates on the middle level.
  5. Cook for 1.5 hours and remove when the internal temperature is 210.
  6. Serve with butter and fresh herbs.

Prep the Apples

  1. Cut apples into quarters.
  2. Rub with olive oil.
  3. Set on the grate at the middle level.
  4. Remove after 30 to 45 minutes.
