Pork tenderloin is simple to make in the Barrel House Cooker with these basic cooking instructions.

Pork Tenderloin 101

Items Needed

  • Pork seasoning
  • Cook Time: 1-3 hours (depending on amount)
  • Meat Internal Temp: 135-155°F



It is important to follow the easy lighting instructions. When the cooker is lit correctly, it operates at the correct temperature for the entire cook.

We highly recommend the use of a digital instant read thermometer, such as the Javelin Instant Read Thermometer, to check the internal temp of food for doneness. This quickly ensures perfectly cooked food to your preferred level of doneness (e.g. rare vs. well done).

Slicing Pork Tenderloin

  1. Generously apply a pork seasoning of your choice.
  2. Insert hook several inches below the thickest end of the tenderloin(s).
  3. Once the cooker is lit according to instructions, hang the tenderloin(s) on the H-Frame, making sure to leave some space between each one. Close the lid.
  4. Cooking Temperature: When properly started, the temperature inside the barrel will be 275-315°F; however, the thermometer will typically read between 220-260°F. The lid thermometer shows a lower temperature than where the food is cooking because it is affected by the exhaust.
  5. For 1-2 pork loins, check temp at 1 hour, for 3-4 check at 1.5 hours, for 5+ check at 2 hours.
  6. Remove the tenderloin(s) from the Barrel House Cooker, cover with foil and let rest for about 15 minutes.
  7. Remove the hooks, slice and you're ready to eat!
