Stuffed Pork Loin & Smoked Brussels Sprouts

Pork Loin

  • Pork Loin
  • Baby Bell Peppers (red, yellow, orange)
  • Andouille Sausage (cooked)
  • Butchers Twine

Brussels Sprouts

  • Brussels sprouts
  • 5 Slices of Cooked Bacon (broken up)
  • Salt
  • Pepper
  • Olive oil
  • Prep Time: 30 min
  • Cook Time: 1.5 to 2 Hours
  • Meat Internal Temp: 160
  • Skill Level: Easy


Trim and Stuff Pork Loin

  1. Trim some fat, leaving a bit for flavor.
  2. Cut into the loin and then to the side as you fillet it out.
  3. Chop up the andouille and peppers then lay in the center of the loin.
  4. Season with salt and pepper.
  5. Roll the loin back into shape and tie it with butchers string.

Prepare Brussels Sprouts

  1. NOTE: Brussels sprouts soak up smoke flavor so be warned about adding wood to the coals.
  2. Cut off the stems and toss the heads into the BBQ Can.
  3. Add olive oil, salt, and pepper then shake.
  4. With the H-frame at the middle level, hang the BBQCan on it so it is below the H-frame.
  5. Place a grate on top of the H-frame.

Place Pork Loin

  1. Place the pork loin on the grate right over the hanging brussels sprouts.
  2. Check the internal loin temperature at 1 hour.


  1. When the loin is at about 140, take out the BBQ Can and add the cooked, broken-up bacon.
  2. Lay the BBQ Can down on the grate next to the loin and let both finish up in the cooker.
  3. Remove when the pork loin at about 160. Let rest for 5-10 minutes, they slice and enjoy!
