Put on a generous coating of a seasoning of your choice.
Either set the chicken on a grate or use the optional Drumstick Rack to hang legs/drumsticks.
Once the cooker is lit according to the instructions, use the Open Frame with the optional Drumstick Rack or a grate on the middle level of the cooker. Close the lid.
Cooking Temperature: When properly started, the temperature inside the barrel will be 275-315°F; however, the thermometer will typically read between 220-260°F. The lid thermometer shows a lower temperature than where the food is cooking because it is affected by the exhaust.
Let the chicken cook for approximately 90 minutes or until the meat internal temperature has reached at least 165°F. Poultry is not safe to consume under 165°F. For delicious dark meat, cook the chicken longer or until the internal temp has reached 175-180°F.
Remove the chicken from the Barrel House Cooker.
