Smoked Chicken Salad

A delicious chicken salad recipe featuring smoked chicken on the Barrel House Cooker. This is our official, unique, recipe!

Chicken Salad

  • 1 Whole chicken
  • 2-3 Stalks of celery, diced
  • 1/2 Red onion, diced
  • 2-3 Green onions, chopped
  • 3/4 Cup Mayonnaise
  • 1/4 Cup Sour cream
  • 2 Tbsp Dijon mustard
  • 2 Whole jalapenos, sliced/deseeded
  • 1/2 Tsp Prepared horseradish
  • 2 Tbsp Fresh parsley, chopped
  • 1/4 Tsp Smoked paprika
  • 1/2 Cup Pecans
  • 4 Garlic cloves
  • Poppy seeds, to taste
  • Salt and pepper, to taste

Dry Rub

  • 1 Tsp Smoked Paprika
  • 1 Tbsp Salt
  • 1 Tbsp Back pepper
  • Canola oil
  • Prep Time: 30 minutes
  • Cook Time: 2-2.5 hours
  • Meat Internal Temp: 165°F
  • Skill Level: Medium
  • 8 cups


Prepping the Chicken

  1. For the chicken rub, mix together the smoked paprika, salt, and black pepper in a bowl.
  2. After applying canola oil to both sides of the chicken, sprinkle on the mixture, covering as much as you can of the bird, including the inside.
  3. Insert two hooks into the chicken. To get the hooks pointed the same way, insert one from within the neck and the second from the outside pointing into the neck.

Prepping Ingredients for the BBQue Can

  1. Next, add the 4 garlic cloves (peeled), jalapeno slices (deseeded), and 1/2 cup of pecans into the BBQ Can to be smoked.
  2. Hang the chicken and BBQ Can in the smoker at the same height. You don’t want the chicken to drip onto the can.
  3. The BBQ Can will take around 20-30 minutes to smoke and should be rotated once halfway through to ensure even smoking of all ingredients.
  4. While the BBQ Can is smoking, chop the celery, red onion, green onions, and fresh parsley.

Mixing all Ingredients

  1. Remove the BBQ Can from the smoker, and dice the jalapeno strips and garlic cloves. Roughly chop the pecans.
  2. Remove the chicken once it reaches the correct internal temperature.
  3. Shred the dark meat and cube the white meat so you have two different textures in the salad.
  4. Place the ingredients into a large bowl and mix all of them together.
  5. Add your chicken salad to a croissant or eat it on top of some spinach. Either way, you won’t be disappointed.
